Description
Conservas Chanquete recreates a delicious recipe of haute cuisine basque-galician: cocochas of cod with baby eels from the rio Minho in extra virgin olive oil. This preserves artisan is cooked to slow fire without the use of chemicals, colors or preservatives to maintain the original texture of the cocochas of cod, gelatinous at the edges, and consistent in the center, that along with the eels of the river Miño and the extra virgin olive oil of galicia, with an acidity of less than 0,2 º, retained make this an exceptional product deli.
Cod (Gadus morhua) caught in the seas of the North are extracted from the cocochas, the most prized part of the fish, located under the chin, with a delicate texture, very jelly-like texture and an incredible flavor. Cured and salted by hand in Galicia by Coinba® following the traditional method and subsequently desalinated at a controlled temperature, never more than 5 ° C.
The eels of the river Miño (Anguilla Anguilla) are fished in an artisanal way, on new moon nights, following the custom of the area transmitted from generation to generation and kept alive for months in the nursery located at the foot of river for Angulas Rio Miño®. Exceptional product and low, of 5 to 7 centimeters, that gives our dish a subtle taste of the sea and river as they come from the most atlantic of the river Miño, almost in union with the ocean after a long journey they crossed from the Sargasso sea.
The olive oil Olei® is an extra virgin from the olive trees gallegos that make Oil an oil of superior quality. Its intense yellow color with golden highlights and aroma of great intensity with notes of olive green and shades of flowers, fresh fruits and vegetables provides unity and balance to the recipe that we present.
And the last ingredient is the purple garlic, a variety of intense aroma, and great quality that acquires its properties thanks to the particular climatic and soil conditions that occur in the geographical area where it is cultivated and from which it takes the name of Las Pedroñeras, understanding regions of the provinces of castilla-la mancha Albacete, Ciudad Real, Cuenca and Toledo.
